Nishimuraya, the premier ryokan of the Sanin region boasts a 160 year heritage. Bustling with visitors since days gone by and cherished in recent years by literary figures such as Shiga Naoya and Yosano Akiko, Nishimuraya’s culinary skills and flavors have been preserved and passed on since its founding in Kinosaki Onsen – the leading hot spring destination in the Sanin area, during the late 19th century.

In a region blessed with seasonal ingredients nurtured by the natural landscapes of Tajima, Tanba, Harima, Hanshin, and Awaji, the chefs at Nishimuraya, who carry on the tradition of Japanese culinary arts, craft dishes that delight both the mind and body.
